Summer Holiday Lunch Club

Join Ms Emanuel for a remote Summer Holiday Club with a difference! Meet up with a few ingredients to hand and make your own lunch. With a few tips and some handy hints, your lunch will soon be ready to enjoy!

Suitable for any child with a vision impairment from ten to teens!

The club will be on Google Meet – we will send you the link when you book.

Week One – Tuesday 21st July

Club Sandwich

To make along you will need:

  • 2 rashers of cooked bacon
  • 3 slices of bread
  • 1 tbsp mayonnaise
  • 1 hard-boiled egg
  • 1 tomato
  • Few slices chicken or turkey breast
  • Small handful salad leaves
  • Cocktail sticks
  • Knife
  • Sharp knife
  • Chopping board
  • Location plate

Week Two – Tuesday 28th July

Customised Cous Cous (serves 4)

To make along you will need:

  • ¼ cucumber
  • 10 cherry tomatoes or 3 larger tomatoes
  • 1 pepper, any colour
  • 2 spring onions
  • 100g sweetcorn, frozen or tinned (drained weight)
  • 150g couscous (already hydrated)
  • Small lemon, juice only (you can also use orange)
  • 1 tbsp olive oil
  • 200ml boiling water
  • small bunch herbs, such as parsley and coriander (optional)
  • small handful nuts, such as flaked almonds, pine nuts, or pistachios (optional)
  • small handful olives, chopped (optional)
  • small handful dried fruits such as raisins, sultanas, chopped dried apricots (optional)
  • Sharp knife
  • Food chopper
  • Chopping board
  • Bowl
  • Kettle or hot water dispenser
  • Spoon
  • Large bowl

Week Three – Tuesday 4th August

Speedy Nachos

To make along you will need:

  • Salsa serves 3
  • 4 tomatoes
  • 1 green bell pepper
  • 1/2 bunch of coriander
  • ½ red onion, diced
  • ½ lime, juiced
  • salt, to taste
  • 50g cheese
  • tortilla chips
  • Grater
  • Food chopper
  • Bowl plate
  • Knife
  • Small food processor
  • Juicing tool or fork
  • Baking tray with a piece of foil
  • Chopping board location plate

Week Four – Tuesday 11th August

Quick Pitta Pizzas

To make along you will need:

  • 1 wholewheat pitta breads
  • 1 tsp tomato purée
  • 1 ripe tomatoes
  • ½ small red onion or frozen onion shallot
  • 20g pepperoni
  • 20g mature cheddar
  • few basil leaves, if you like
  • Grater
  • Food chopper
  • Bowl plate
  • Knife
  • Baking tray with a piece of foil
  • Chopping board location plate
