Join Ms Emanuel for a remote Summer Holiday Club with a difference! Meet up with a few ingredients to hand and make your own lunch. With a few tips and some handy hints, your lunch will soon be ready to enjoy!
Suitable for any child with a vision impairment from ten to teens!

Week One – Tuesday 21st July
Club Sandwich
To make along you will need:
2 rashers of cooked bacon
3 slices of bread
1 tbsp mayonnaise
1 hard-boiled egg
1 tomato
Few slices chicken or turkey breast
Small handful salad leaves
Cocktail sticks
Knife
Sharp knife
Chopping board
Location plate
Week Two – Tuesday 28th July
Customised Cous Cous (serves 4)
To make along you will need:
¼ cucumber
10 cherry tomatoes or 3 larger tomatoes
1 pepper, any colour
2 spring onions
100g sweetcorn, frozen or tinned (drained weight)
150g couscous (already hydrated)
Small lemon, juice only (you can also use orange)
1 tbsp olive oil
200ml boiling water
small bunch herbs, such as parsley and coriander (optional)
small handful nuts, such as flaked almonds, pine nuts, or pistachios (optional)
small handful olives, chopped (optional)
small handful dried fruits such as raisins, sultanas, chopped dried apricots (optional)
