The 75th anniversary of VE Day, standing for Victory in Europe Day, is a day that will be celebrated by many across the country on Friday 8 May.
This year however, even with having an Early May Bank Holiday, celebrations will be drastically different with the country remaining in lockdown.
There are still lots of ways we can all get involved in the big day, from hosting a special VE Day celebration picnic or afternoon tea with our household, to decorating the house with flags and bunting.
As usual, there will also be a two-minute silence of national remembrance that will take place at 11am on VE Day.
With tea parties and picnics in mind, our very own Miss Emanuel, Head of Independent Living Skills, has shared a great recipe for delicious scones which students and families can all whip up at home! She also shares some useful tips for cooking with a vision impairment.

VE Day Scones
Ingredients;
50g soft margarine
200g self-raising flour
50g caster sugar
50g sultanas
A little milk
Method;
- Place butter and flour in to a mixing bowl and using a fork or your fingertips,
- Add in the caster sugar and sultanas, and give it all another mix
- Add in the milk, a little bit at a time, until a soft dough is formed
- On a flat surface, pat the dough in to a deep round shape and using a pizza cutter, cut this in to 6 pieces – much like a pizza!
- Shape the individual scones and place on to a tray lined with baking paper
- Using a little more milk, brush the tops of the scones!
- Pop into the oven and turn it up to 220C/425F/Gas 7
- The scones will take about 15 minutes
Enjoy with jam and clotted cream!
